Established in September of 2000, Birches Restaurant has become an integral
piece of the Canton community. Locals come in for the great food, fun music and
the satisfying feeling of being home. Brian and Marnie Bruso continue to push
the evolution of both their restaurant and the neighborhood. Outdoor Sidewalk
Cafe seating has become a huge success, and is now available during the
temperate evenings.
The upstairs dining room is immensely popular for functions of five to fifty,
while the elegantly cozy main dining room is perfect for that special evening
out or a delectable bite on the way home. Even the nonsmoking regulars prefer
to dine in the historic red oak cocktail lounge where the neighborhood
conversations permeate the relaxed atmosphere.
Birches Restaurant, named after Robert Frost's poem Birches, has been
designated one of 12 Exceptional restaurants in the Mid-Atlantic by Gourmet
Magazine. Executive Chef, and owner, Brian Bruso's background combines the
four star Treaty of Paris in Annapolis, Scales and Shells in Newport, Rhode
Island and Aldo's in Baltimore's Little Italy. Chef Bruso has mastered the
art of cooking on a hardwood grill and blends New England style cuisine with
European Flair.
